Progressive Dinner - May 18, 2003 Recipes Jambalaya
1 tbl vegetable oil 1 lb Andouille sausage or any other pure pork smoked sausage (Kielbasa) 1 lb chicken or ground beef 1 tbl salt 1 tsp cayenne pepper 1/2 tsp black pepper 2 cups chopped green bell pepper 1 cup chopped onion 1/2 cup chopped green onion 1 cup chopped celery 1/2 cup chopped parsley 5 cloves minced garlic 2 cans tomatoes undrained 2 cups converted rice 1 1/2 cups water
Brown sausage and chicken or beef in vegetable oil, remove and drain. Add bell pepper, onions, celery and garlic. Saute' about 5 minutes. Add tomatoes, parsley, salt, pepper and meats. Cover and simmer 20 minutes. Add rice and water. Cover and cook 25 minutes or until rice is tender and water is absorbed.
